S.E.R.V.E. - General presentation
In 1993, less than 4 years after the Revolution, the Count Guy de Poix, owner of 50 ha of vineyards in Corsica and owner of one of the most appreciated brands of Corsican wine, "Domaine Peraldi", decided to explore new winegrowing regions.

He chose Romania because, against all discouraging appearances, he felt the potential of the winegrowing regions and the hospitality of the locals.

Thus, in 1994, the brand "Vinul Cavalerului" was born, a brand which has already become a reference in the domain.

The SERVE Company (The European-Romanian Society for Exceptional Wines) has been for a few years the only private company in the winegrowing business. 

Ever since the beginning, the SERVE logo was the QUALITY of the products, and in order to achieve it, neither the shareholders (most of them are French wine-growers) nor our team have spared any efforts.  

Nine years later after the launch, the brand "Vinul Cavalerului" currently represents the guarantee of quality in Romania.

Founded in 1994 by Mr. Count Guy Tyrel de POIX, French wine producer (owner of 50 ha of vineyards in Corsica and heir of an old French noble family, owner of the champagne factory Piper-Heidsiek), S.E.R.V.E. has started its activity as a distributor of Romanian wines, bottled under its own brand: VINUL CAVALERULUI.  

The main objective ever since the beginning was to promote Romanian wines on the foreign market. The reality of the 90 brought to discussion the lack of a constant supply of qualitative wines. Thus, the founder, Mr. Guy TYREL de POIX, quickly decided that the activity of the company should expand to the production of wines (1995), later on to wine processing (1998) and finally to the foundation of a new plantation (2000), including the nursery (2001). Currently, the Romanian investment is over 1.5 million euros and we are envisaging that in 3 to 5 years, the technology level both for the wine cellar and for the vine processing shall increase through further investments.

The first crop was vinified in 1995 at the Ceptura wine cellar from the Dealu Mare vineyard, and each campaign has brought improvements to the procedures of vinification, conditioning, stocking and bottling ever since, adding a constant care to maintain and preserve the quality which is specific to the S.E.R.V.E. company.  

Located in the South of the Oriental Carpathians, the Dealu Mare vineyard is one of the oldest in Romania. Today it spreads on a surface of 20,000 ha and it is situated at the same altitude as Bordeaux, falling under the influence of the Black Sea and protected by the Carpathians. Besides, the greatest part of the traditional local culture is focused on wine growing and vinification, since the first plantations had been developed 700 years before, in the area known today as Valea Calugareasca.    

The Ceptura area where the vinification procedures are performed lies on a surface of 2,000 ha; it is located at the center of the Dealu Mare vineyard and it benefits from a large southern exposure. Approximately 60% of the surface is cultivated with black grapes, most of them being Merlot, but there are Pinot Noir, Cabernet Sauvignon and Feteasca Neagra grapes as well. Today we own 28 ha of grape vines in the area and this surface is to be extended within the next years with terrains of new plantations coming from the private nursery.

The small production (less than 45hl/ha), the manual harvesting, the grape selection for acceptance, the temperature control during vinification and the selection of various blendings by a team of French oenologists, lead to the particular quality of the wines produced by the S.E.R.V.E. company, which have been awarded various medals in national and international competitions.

Vineyards

Since the grapes are the starting point for a good wine, we particularly dwell on choosing the vineyards that are well adapted for various types of grapes and we pay special attention when choosing the moment to harvest the grapes an to the preservation of the grapes during transportation (they are placed in 13 kg boxes and transported at a temperature of 10°C in cooling trucks).

Minis - Maderat
This is a traditional vineyard recreating its fame ever since the XV century. It is located 20 km east from Arad city. It includes the winegrowing centers Minis (where the most important vineyards are Paulis, Cuvin, Ghioroc, Baratca, Siria) and Maderat (with the vineyards Pincota, Silindia, Mocrea). The Minis is the furthest winegrowing center to the north, where we may still feel the influence of the Adriatic climate that the winegrowing areas from Banat benefit from and which leads to significant ecoclimatic differences between the two centers.
At Minis, there is a predominance of grapes for superior red wines (Cabernet Sauvignon, Pinot noir, Cadarca, Merlot, Burgund mare), followed by the grape species meant for superior white wines (Italian Riesling, Feteasca regala, Muscat Ottonel).

The table grapes cultivated here are: Chasselas dore + rose and Muscat Hamburg.

Dealu Mare - Ceptura
The winegrowing center from Urlati-Ceptura is part of the Dealu Mare vineyard, together with Boldesti (322 m), Valea Calugareasca (224 m), Tohani (222 m), Cricov (353 m), all located in the Prahova district, and the centers Breaza (253 m), Pietroasa (226 m), Merei (192 m), Zoresti (191 m) from Buzau district, all enjoying an ancient and rich winegrowing tradition. The frequency of minimal temperatures that have a harmful effect on vines is one of the lowest.
Except form the winegrowing centers from Boldesti, Cricov and Breaza, all the other six centers enjoy favorable circumstances regarding the cultivation of grape species for superior red wines (Cabernet Sauvignon, Feteasca neagra, Pinot noir, Merlot and Burgund mare). Apart from the winegrowing center Cricov, all the other eight winegrowing centers cultivate grape varieties for superior white wines (Feteasca alba, Italian Riesling, Pinot gris, Sauvignon, Feteasca regala and Muscat Ottonel).

Istria - Black Sea 
The vineyard from the hills of Dobrogeinou, which has surged on the winegrowing map of the country, belongs to the winegrowing center Istria from the district of Constanta, together with the vineyards Mihai Viteazu, Corbu and Tariverde.

The grape variety is mainly focused on the production of superior red wines, using the species Cabernet Sauvignon, Pinot noir, Merlot and Burgund mare. The grape variety for superior white wines is differentiated for each winegrowing center, and it is constituted of Pinot gris, Riesling Italian and Sauvignon. The table grapes include grape species with maturation during the stages II to V (from Chasselas doré to Afuz Ali).
